Cream of Asparagus Soup
2 cups of Asparagus (I use the ends that are usually thrown away, but I peel them first)
1 1/2 cup chicken stock (remember how to make it from the wing tips?)
1/2 cup chopped onion (I use purple onion for extra anti-oxidants)
1 tsp fresh lemon juice
1/8 tsp dried mace

Balsamic Vinaigrette Dressing
1/3 cup extra-virgin olive oil
1/3 cup balsamic vinegar
2 tsp chopped fresh thyme
1/4 tsp sea salt
1/8 tsp white pepper
1 T chopped fresh basil
Combine all stirring with a whisk (or cover and shake). Use within a few days.

Creamy Blue Cheese Dressing
1 cup Happy Cow Buttermilk
1/4 cup mayo (be careful the low fat versions are loaded in sugar)
1/3 cup extra-virgin olive oil
1/4 cup wine vinegar (I have used red or white and both are good)
1/4 pound of Happy Cow Blue Cheese
Combine all in a blender to desired consistency, chill and serve.
