1 cup Happy Cow milk
1/2 cup mayo (no soy oil)

One Dish Casserole
1 cup brown rice- measure uncooked, then cook by package directions

1/2 cup vinegar
2 large cucumbers, peeled and grated(I used the food processor grating blade)
2-8 ounce cream cheese

Cranberry Relish (Great for the holidays)
1 Bag fresh cranberries
3 apples (peeled if you like) and cubed
2 pears (peeled if you like) and cubed
1/2 cup local honey (if you like it sweeter, add a tsp of stevia)
2 tsp cinnamon
1/2 tsp nutmeg

Blue Cheese Vinaigrette Dressing

1/4 cup fresh squeezed lemon juice 1/4 tsp dry mustard
3/4 cup extra virgin olive oil 1 tsp dried basil
2 cloves garlic, minced 1/4 cup blue cheese (I use Happy Cow)

Pimiento Cheese
Happy Cow Cheddar Cheese (I use 2 year) 2 cups,grated
1 jar of chopped pimientos, drained
Mayonnaise (watch for soy oil) just enough to hold it all together.
Mix all together and enjoy with celery or a slice of Ezekiel bread.

Steel Cut Oats with fruit
Cook the desired amount of oats per package directions. I add a pinch of salt and a little stevia.
Once cooked I put a little butter, cinnamon and fruit (I have used frozen blueberries or diced apples or even bananas. Anything goes!)
Then if you want, pour a little Happy Cow Milk over it. Delicious!

Sweet Potato Casserole
3 cups of cooked fresh sweet potatoes,mashed(you can boil or bake them)
1/2 cup local honey (or 4 tsp stevia)
1/2 tsp each cinnamon and nutmeg
1 free-range egg, beaten with a fork
1/4 cup milk
1/4 cup butter, softened
Combine all of the above together and place in a casserole dish.

Whipped Topping
1 cup liquid whipping cream
1/4 teaspoon stevia
1/2 teaspoon vanilla
dash cinnamon
In a small glass or metal bowl begin beating whipping cream. When cream begins to thicken, add the other ingredients. Continue beating until stiff peaks form. Refrigerate for at least 2 hours, then use where ever you like.
