Cucumber Dip

1/2 cup vinegar

2 large cucumbers, peeled and grated(I used the food processor grating blade)

2-8 ounce cream cheese

3/4 cup mayo (no soy oil!)

1 tsp garlic powder

1/2 tsp sea salt

Pour vinegar over cucumbers and let sit for 1 hour then drain (do not rinse). Add all ingredients into the food processor and blend together. If you don’t have a food processor, I would try a mixer, but make sure your cream cheese is softened. Chill several hours and serve with your favorite veges.
