Apple Chicken Salad
1 free-range chicken, cooked (I boil or bake mine), deboned and shredded or chopped in food processor
1/2 granny smith apple and 1/2 red delicious apple, both chopped
1 stalk of celery, chopped
Sea salt to taste
Dressing is a mixture of 1/2 mayo to 1/2 sour cream and the juice of one small lemon, mixed.
Combine first 4 ingredients in a large bowl. Make the dressing in a small bowl then add to chicken mixture. Serve immediately over a bed of green leaf lettuce or refrigerate for later. Garnish with more slices of apple. (Chopped walnuts can also be added if you like).
