Choice #1 Tequila/Lime Chicken
Place whole, free-range chicken in a deep-dish baker with a lid. Put 1-2 fresh rosemary sprigs in the cavity. Pour 1/2 cup Tequila in the dish and squeeze in the juice of one lime. Cover and bake at 350 until done (about 45-60 minutes).
Choice #2 Garlic Chicken
Place whole chicken in a deep-dish baker. Raise the skin around the breast and place several cloves of crushed garlic. Pour 1/2 cup of dry white wine in the dish, cover and bake at 350 until done (about 45-60 minutes).
