Baked Chicken Breasts

2 half chicken breasts (free-range, of course)

1 cup chicken broth

1/2 cup extra virgin olive oil

1 lemon

3 large or 6 small garlic cloves, diced

1 shallot, diced

1 heaping tablespoon of capers

2 tablespoons dried oregano

1 tablespoon dried basil

Preheat oven to 350 degrees.  Trim excess fat from chicken. If the breasts are thick, carefully slice them laterally, so they end up about half as thick (about 1/4 inch each). Spread chicken in a baking pan. Add chicken broth then drizzle with olive oil. Cut lemon and squeeze juice over chicken. Add garlic, shallots, caper, oregano and basil. Bake for 30-35 minutes. Enjoy!
