Breakfast Scramble

The amounts of each ingredient will depend on the number of people you are serving.

Spring onions (also called scallions or green onion) sliced or chopped

fresh spinach

cooked (left-over) short grain brown rice

beaten (free-range) eggs

Sautee the onion in butter or extra virgin olive oil, added the spinach. Once the spinach wilts, add the rice and then scramble the egg into the mixture. Sea salt and pepper to taste.
