Feta-Spinach Salmon Roast

3 oz cream cheese

3/4 cup crumbled feta cheese

2 scallions, chopped

1/2-1 cup chopped fresh spinach

2 skinless salmon fillets (3/4 lb)

Extra virgin olive oil

Preheat oven to 350 degrees

Combine cream cheese and feta well. Add scallions and spinach. Place first salmon fillet in shallow baking pan,spread all mixture over and top with second fillet. Brush top with olive oil. Bake for 20 minutes. Slice with serrated knife and serve.

2 servings with 5 gms carb, 45 grams protein
