Grandma’s Standby Casserole

1 lb ground meat(beef, deer, etc.)

2 Tabs butter or extra-virgin olive oil

1 clove garlic

1/2 tsp sea salt

Dash white pepper

3 large, fresh tomatoes, peeled and cut up

6 scallions

4 oz cream cheese

1 cup sour cream

1 spaghetti squash cooked by  boiling whole for 45 minutes

1/2 cup Happy Cow 3 year cheddar

Brown meat in butter or oil. Pour off any grease. Stir in crushed garlic, salt, pepper and tomatoes. Cover and simmer on low for 20 minutes. Slice scallions, including crisp part of the green, and combine with sour cream and cream cheese, blending well. In a 6 cup casserole dish, layer 1/2 spaghetti squash (deseeded and forked into strings), half the scallion mixture and half the meat mixture. Repeat the layers and top with cheese. Bake for 20 minutes. Well worth the trouble!

Yields 5 servings. 15 gms carb, 2 gms fiber, and 2.3 gms protein
