Herb Roasted Potatoes
3-4 medium red skinned potatoes, washed but not peeled
1 tablespoon extra virgin olive oil
1tablespoon Herbs-de-Province
Cut potatoes in chunks and place ina a bowl. Add oil and herbs and toss. Spread in a single layer on a shallow pan such as a cookie sheet. Cook at 400 degrees for 15-20 minutes or until tender, but not mush.
