Herbed Tomatoes
4 ripe tomatoes, peeled and chunked
1 cucumber, sliced thin
1 bell pepper, sliced thin
3/4 tsp sea salt
2/3 cup extra virgin olive oil
1/4 tsp white (or freshly ground black) pepper
1/2 cup fresh parsley
1/4 cup balsamic vinegar
4 green onions, sliced thin
Stack tomatoes, cucumber and bell pepper in a glass bowl or jar. Mix all other ingredients together and pour over top. Cover and chill overnight. Delicious!
