Shrimp Creole

1-2 lbs fresh(not farm raised) shrimp

1 lg onion, chopped

1 clove garlic, crushed

4 stalks celery(or 1 bell pepper),chopped 

2 tablespoons extra virgin olive oil

3 1/2 cups chopped fresh tomatoes (or 1 large can)

2 bay leaves

1 sprig of fresh thyme (or 1/2 tsp dried)

Sea salt and white pepper to taste 

Cook shrimp and peel. Saute onion, garlic and celery in olive oil until onion is translucent. Add tomatoes and seasoning. Cook about 40 minutes, add shrimp, heat through and serve. May serve over short grain brown rice, or just eat like a soup.
