Sweet Potato Casserole

3 cups of cooked fresh sweet potatoes,mashed(you can boil or bake them)

1/2 cup local honey (or 4 tsp stevia)

1/2 tsp each cinnamon and nutmeg

1 free-range egg, beaten with a fork

1/4 cup milk

1/4 cup butter, softened

Combine all of the above together and place in a casserole dish.

Topping:

1/4 cup ground flax seed

1 tsp stevia

1/4 cup butter 

1/2 cup chopped pecans or walnuts

 Mix stevia and ground flax seed, add butter and blend with a pastry cutter. Add nuts to mixture and spread all over top of casserole. Bake at 350 degrees for 30 minutes.
