Texas Chili Stew
1 Pound ground beef (grass fed, of course)
Chopped red onion (I use 1/2 of a medium)
2 cloves of garlic, crushed
Extra virgin olive oil
5 medium tomatoes, peeled and diced (or 1 large can)
2 cups water
2 tablespoons of chili powder
2 carrotts peeled and diced
1 other chopped vege; I have used a red skinned potato(with the skin left on), or several chopped squash or Italian style green beans
Brown meat, onions and garlic in olive oil. Add tomatoes, water, and chili powder and stir. Then add veges. Bring to a boil, then reduce heat and simmer 30 minutes. Put in a bowl and top with Happy Cow Smoked Swiss Cheese! It's good without the cheese, but it's great with it!
