Zucchini Casserole

2 Tbs butter

1 1/2 pound fresh zucchini, sliced

2 free-range eggs, beaten 

1 T flour( brown rice, spelt, rye, etc)

1/2 tsp dry mustard

1/2 tsp ground nutmeg

1/4 tsp sea salt

1/8 tsp or less of stevia

White pepper to taste

1 cup cream(from the top of your Happy Cow milk works great!)

6 oz sharp cheddar cheese, shredded (I use Happy Cow 3 year)

Preheat oven to 325 degrees. Saute zucchini in butter until tender. Transfer to casserole dish coated with olive oil. Combine eggs, flour, and spices and whisk together. Add cream and cheese. Mix well. Pour over zucchini and bake 30 minutes or until set.

6 servings: carbs 5 gm, fiber 1 gm, protein 11 gm
